Chicken udon noodle soup

If you come to our house, don’t expect a bowl of Campbell’s when we offer you chicken noodle soup. Born from a conversation with the ab-fab, needs-to-own-a-food-truck Kelli, this delightful Thai style noodle soup is so good, you should probably make a batch just for yourself.

Chicken Noodle Soup

Makes two servings, but more typically one serving…

  • 1 package refrigerated Udon noodles
  • 2 cups Chicken broth
  • 1 & 1/2 tablespoons Adam’s Natural Peanut Butter, chunky
  • 1 & 1/4 tablespoons Soy Sauce
  • 1 teaspoon Fish Sauce
  • 1/4 teaspoon Sesame Oil
  • 1/8 teaspoon Sambal Oelek (chili sauce)
  • 1/4 teaspoon Spirulina
  • Salt & pepper to taste
  • Optional: 1 teaspoon maple syrup or sugar
  • 2 stems Bok Choy, destemmed and sliced into 3 inch x 1 inch pieces
  • 1/2 teaspoon Sesame Seeds
  • Chin-su chili garlic sauce (or other hot sauce)

Combine broth, peanut butter, soy sauce, fish sauce, sesame oil, sambal oelek, maple syrup and spirulina in saucepan and turn heat to high. Use a wisk to disintegrate peanut butter into broth mixture. Once the broth comes to a boil, add Udon noodles and turn heat to medium-high. After 7 minutes, top noodles with Bok Choy, allowing them to stay above broth somewhat. Once noodles start to separate, use tongs to help pull them apart and mix the Bok Choy into the broth. Taste sauce and add salt and pepper to taste. When the noodles completely separate they are done cooking. Use tongs to add noodles to a bowl and ladle to pour broth on top. Garnish with sesame seeds and chin-su.

Vegetarian Method

This recipe is easily made vegetarian by using Vegetable Broth (preferably Pacific Vegetable Broth), and adding additional soy sauce in place of fish sauce.

Why Chunky?

We use chunky peanut butter to mimic the Thai-style cuisine of using crushed peanuts on top of dishes. Creamy will work just as well, but chunky gives an added dimension and crunch to the dish.

No Spirulina?

Most of the packaged Udon noodles come with a packet of flavor. We buy the Fortune Udon noodles in Regular flavor. If you do not have access to spirulina, add only a quarter of the package of flavor packet that comes with the noodles. We prefer to use the superfood version to cut down on MSG in the body.

Two Servings Isn’t Enough

Easily double, triple or quadruple this recipe by multiplying all the ingredients by how many servings. On our recent family reunion trip to Maui, we had a pot of 8 (2 person) servings going alongside a pot of 2 (2 person) vegetarian servings. With 10 people, there could have easily been more!
